If you are missing potatoes, then this is the recipe for you.

Mashed Fauxtatoes

Cauliflower                                16 oz
Ultra Low Fat Cream Cheese         1 Tbsp
Becel Topping & Cooking Spray     To Taste
Salt & Pepper                            To Taste
Crushed Garlic                           To Taste
Chopped Green Onion                  1 onion

Steam the cauliflower until it is very, very soft, drain really well.  Mash with cream cheese until desired consistency, you can also puree it with a blender, I just use a potato masher.  Stir in the remaining ingredients, divide into desired portion sizes, transfer to baking dish and bake at 350 for 10-15 minutes.  I only bake it to remove some of the moisture.  This is a really great replacement for potatoes.

For those in the U.S., just a note that you'd use I Can't Believe It's Not Butter spray or other approved margarine substitute spray in place of the Becel.

This is one of my favorite recipes! Thanks Angela! We eat alot of the Mashed Fauxtatoes especially with our beef dinners! We tried to get my daughter to eat them, we told her the name of the dish but didn't say what it was. She seemed to like it until we told her it was cauliflower, LOL. Oh well, more for me!!

they are awesome!  I formed mine into little cakes and broiled them till they browned...delicious, my family loved them too. I also put a little " emerils Bayou Blast seasoning" on after they were shaped into cakes,yum!:D
