If you are missing potatoes, then this is the recipe for you.
Cauliflower 16 oz
Ultra Low Fat Cream Cheese 1 Tbsp
Becel Topping & Cooking Spray To Taste
Salt & Pepper To Taste
Crushed Garlic To Taste
Chopped Green Onion 1 onion
Steam the cauliflower until it is very, very soft, drain really well. Mash with cream cheese until desired consistency, you can also puree it with a blender, I just use a potato masher. Stir in the remaining ingredients, divide into desired portion sizes, transfer to baking dish and bake at 350 for 10-15 minutes. I only bake it to remove some of the moisture. This is a really great replacement for potatoes.
