found the original while cruising an LC forum and adapted it for Dr B, not quite popcorn but really good!

225 g Cauliflower florets chopped to popcorn kernel size
ICBNB spray
Mrs Dash Herb and Garlic

spray the chopped florets with the ICBNB
sprinkle with 1/2 tsp Mrs Dash Herb and Garlic

place florets on a baking pan so they are in a single layer
bake in the oven at 350F until lightly browned (this caramelizes the cauliflower and makes it a bit sweeter), remember to turn them over a couple of times while baking

the original version had Mrs Dash Table blend so I'm going to take that in and see what they say

Yield: 1 Vegetable
1 garnish, 1 seasoning

I was just about to post this.  Mine was a bit different though, florets sprayed with PAM and sprinkled with salt and pepper and baked at 475 degrees for about 30 minutes or until the ends are seriously browned.  Delicious.

That is in a childrens cook book i bought, trying anything to get my kid to eat anything other then chicken noodle soup! I used the becel spray
a little and 475 till all brown...super yummy. My daughter almost tried one! ??? ???

I just tried this and had two problems:

1. I cooked at 475 for 30 mins and they basically came out charred:(
2. I found chopping into tiny florets very time consuming.

For 1, I might try cooking at 350 instead.
For 2, next time I'll rough chop the whole head in a food processor.  Once I'm baking the whole batch this way it shouldn't matter if I get a stem.

Any other suggestions?

Btw...I still ate them and my son (after much convincing it was "special" popcorn) loved them too!

16bag frozen cauliflower florettes
Pam Butter Spray
Sea Salt

Heat oven to 400, pour bag of cauliflower on sprayed baking pan, sprinkle with sea salt.  Bake for 30min, turn & bake for another 25-30min - there are a few bits that get charred sometimes, but they're mostly just golden brown & yummy!  Plus, it's a lot quicker & easier than chopping a head of cauliflower, and frozen cauliflower is more economical than a fresh head (at least here in the US) :)

Lost 78lbs in 2007, maintained for more than 4 years.  Regained after serious accident 10/31/11 that resulted in numerous steroid treatments, ACDF (neck fusion) and will have major lumbar fusion in 2013.  Need to get all of the weight off before the lumbar fusion to give my body it's best chance of achieving successful fusion!

I made this yesterday to go with my chicken at lunch and it was so good. I didn't use frozen, I used fresh but it was a very nice change. For supper I made cauliflower rice and that was also delish.
