OK, first a quick note about which chicken to use.  On a "portion" based diet like the Dr. B diet, to me, you want to eat as much mass and/or bulk as you can.  If using a canned chicken, according to the Dr. B food guide, different brands have different weights that equal 1 serving.  On the U.S. food for example, one portion is 71g (2.5 oz.) of one brand, but only 56g (1.98 oz.) of another, and a full 99g (3.5 oz.) of yet another.  So, if you can find the brand that lets you have the bigger portion, to me, that's the way to go.

Same with bread.  I hunted high and low to find a bread that is "1 slice = 1 serving" so I could have a "normal" sandwich if I wanted to.

1 Portion of canned chicken breast (whatever weight that is for your brand)
1 Tbsp of an allowed fat free mayonnaise
1 Tbsp Walden Farms Calorie Free Creamy Bacon Dressing
1 or 2 pieces of toast made from a permitted bread (depending upon the bread and how many bread servings you have)

Stir chicken to break up thoroughly and mix with dressings.  If only using one piece of toast, spread the chicken salad on the toast and eat as an open faced sandwich.  Spritz the toast with an approved margarine spray before putting on the chicken for a little more flavor if you like.

Yield: 1 Protein, 1 or 2 Bread Substitute, 1 1/2 Miscellaneous:Garnish*

* Only 1 Tbsp of mayonnaise substitute per day.

I am going to have to try this recipe this week if I can find the bread I am allowed in my area.  I have just started using Turkey in place of chicken.

Jeff - in Ontario, the Loblaws chain of stores (so Zehrs, Fortinos, Loblaws) carry the Oroweat Whole Wheat & Multigrain Fibre Counting breads.  They are 1 slice = 1 serving and of all the diet breads I've tried, I think they taste the best.
