Ok..I ate this as my lunch but in restaurants they have it under "Appetizers" so that's where I decided to put it.

3oz mushrooms (cleaned and stems removed)
2 tablespoons 95% fat free Herb and Garlic Philly cream cheese
1oz green onions (chopped finely)
dash of fresh lemon juice
1oz crab meat

Preheat oven to 425
Mix all ingredients besides mushrooms in a bowl.
Spoon mixture into mushrooms
Spray cookie sheet with pam

Bake for 10-15 mins

Put under the broiler until lightly golden.

You may have a bit more or less of mixture depending on size of mushrooms.

Yield: 1/2 Vegetable serving, 2 garnishes, just shy of 1/3 protien serving.

I did a variation of this tonight.

Preheat oven to 375

Portobello mushrooms 6oz
1tablespoon Fat Free Herb n Garlic Cream cheese
1tablespoon fat free mayo
1oz green onion
1oz spinach
dash of chilli powder
dash of onion powder
dash of pepper
2 garlic cloves
2 sprays of Becel

Mix the cream cheese, mayo, green onion and spices together in a bowl. Cleaned and stem the Portobello mushrooms.

Sautee the garlic cloves in PAM, add áspinach and cooked until wilted.
Place the garlic and spinach on mushroom, now place cream cheese mixture on top.
(if you can find the allowed parmesan cheese sprinkle a little on top now)
Spray top with 2 sprays of becel or ICBINB spray.
Spray PAM on cookie sheet and bake for 20 mins.

The mixture was enough for two mushrooms. I gave one to my husband (sprinkled parm cheese on his). I served it with chicken and 4 oz of asparagus. So filling, I couldn't even finish my dinner.

2 garnish
1 Vegetable serving

I made this on the weekend for a very satisfying lunch. I used the 100 g. of crab and mixed it with crushed melba toast and green onion along with the cream cheese. I baked the mixture in portabella (sp?) mushroom tops for about 6 minutes and then finished off with a couple of minutes on broil. It was delicious!

Mmmm...  made a version of this tonight, with 100g crab, 1 tbsp herb & garlic 95% fat free cream cheese, fat free miracle whip, and a touch of crab dip mix I have.  Wow.  It was SOOOO good.
