I am nervous some how the scale is wrong and i am blowing the program.???

No, don't worry, you're not doing anything wrong!  8oz does seem like a lot of veggies!

If you can't eat it in one go (and I can never eat it in one go!) then spread it out over the day.  This also stops you from feeling hungry as you always have veggies to hand.  Lots of people use veggies in the foods they cook too.  For example, if you make an omelette from egg whites or a fresh tomato spaghetti sauce for the tofu noodles then some of your daily veggies go in there.  I made stuffed mushrooms the other day.  The mash potato alternative (recipe on the site) is made with cauliflower.  As time goes on you will start experimenting and you will get used to the amount of veggies we are allowed.

Sometimes I can't have all the veggies, but I have heard that it's good to eat all of them as it helps with weight loss.  I'm not sure how true this is, but usually if I feel hungry/like munching on something I always go for the veggies rather than something else so it helps me get it in for the day!

Also, I use heavier veggies when I have a fresh salad (like peppers, cucumbers) - it helps get the weight up and is easier for me to get the 16oz in for the day if i'm struggling.

Okay!!! I am going to start to spread it out due to me being hungry!!! Also how much and what kind of pasta sauce can we use? I didn't see that in our book :;):

As far as I know everyone makes their own sauce from scratch using tomatoes, onions garlic and other veggies etc that you like.  You can put in whatever you like as long as it's listed!

Have fun experimenting!
