For me this really hits the spot. I eat it for breakfast and have the rest of the shake (1/2 c.) blended with 4 more berries as a dessert (to complete the protein and fruit) after a veggie meal at lunch. You can easily half this recipe if you don't trust yourself not to eat both at once, although you could... but it means you've had both your breads for the day and for me that's too big a carb-hit all at once.

Naomi's Bread Pudding - 2 servings

2 slices allowed bread (eg. Dempster's Body Wise)
8 medium strawberries, quartered (if using frozen do not thaw)
1/2 c. vanilla protein shake
1/4 c. egg replacer
1/8 tsp. cinnamon
dash nutmeg
2 tsp WF maple syrup
Cooking spray
2 - 7 oz ramekins (or other similar oven-safe dish)

Spray ramekins well with cooking spray. Dry bread in a 250 oven for 5 minutes, turning halfway. Cube each slice of bread into 16 cubes, reserving any crumbs. In each prepared ramekin, make 2 layers of bread cubes and fruit, topping with any crumbs. In a small bowl, whisk together the egg replacer, protein shake, cinnanmon and nutmeg. Pour 1/2 the mixture over one one ramekin and 1/2 over the second. Cover ramekins loosely with plastic wrap and press down lightly (bread will not be totally submerged.) Refrigerate 30 minutes.

Pre-heat oven to 350. Remove ramekins from fridge, press down lightly on plastic wrap to submerge bread, remove wrap and bake 50 minutes. If you like your bread pudding a little drier, bake 5-10 minutes longer. (Also, I use a water bath for the first 30 minutes of baking but the pudding turns out fine without it.) Allow to cool slightly and top with syrup. If eating later, do not add the topping. Re-heat briefly in microwave, top and serve.

Yield per serving: 1 bread, 1/2 protein, 1/2 fruit, 1/3 garnish


Substitutions: Use an apple, a peach or 4 small apricots instead of strawberries. Or use chocolate protein shake instead of vanilla. Substitute WF chocolate syrup or dip intstead of maple syrup.

Options (be sure to adjust yield):
- Whisk sweetener into shake/egg mixture if you want the pudding a bit sweeter but I find it fine as is.
- Use more syrup or add a tsp of WF marshmallow cream to topping.

Maintainers only: for a lower protein dessert, use Almond Breeze Sugar Free Almond Milk (Choc or Vanilla) or low carb/low cal milk instead of protein shake. You will need to add sweetener if you make this substitution. You may also want to add 1/8 tsp vanilla.

You are my hero, I have been waiting for you to finish this - it sounds delish.  But I have to wait until I get to the clinic on Tuesday and then I can purchase the shakes!   But I all I can for now is WOW!

Thank you!!  I was thinking about bread pudding a couple of days ago, but figured it was a "non-no" fantasy. Can't wait to try it.

Delicious! I made mine with a toasted High Protein Pita cut up though, they are all out of legal bread at my grocery store. Still very yummy!

On another note, I'm putting an order together  for Low Carb Grocery and I have heard mention of a Walden Farms Marshmellow spread, but I can't find it on the list... ( I can order it but can't find it on the approved food list )

Some WF products are NOT on the list, but as others here have mentioned, they seem to contain the same ingredients and have the same nutritional info as those on the list so some here use it anyways.  Of course to remain truly strict, you should not have it unless you submit it for approval to your clinic.
