I just had to share this wonderful new discovery that I'm now going to eat every morning for breakfast!! I love crepes with a bit of jam and used to have that as a weekend treat once a month. Now I can have these every day. Enjoy! - Bri 
Bri's Dr. B Crepes
- 1 packet Dr. B oatmeal (I used maple brown sugar, cinnamon would be great too) - 6 egg whites - 1/2 cup water - filling: allowed jam (or allowed fruit) - options: touch of sweetner and cinnamon to taste; allowed maple syrup ***Makes 4 crepes (when using 1/3 cup liquid) = 2 protein servings. I save 2 crepes for the next morning so I'm eating 1 protein serving for breakfast.
In a bowl, stir oatmeal and water until mixed. Add 6 egg whites and stir. Consistency should be quite runny.
Place pan (I used a small omelet pan) on medium heat, sprayed with allowed non-stick spray. Take 1/3 cup of the mixture and poor into the pan, swirling it around so it covers the surface in a thin layer. Just like in pancakes, watch for bubbles to form on the surface, and the edges slightly curl away from the side. Shake the pan at this point to loosen the "crepe" from the surface. Flip crepe and cook on the other side. Make sure both sides are cooked through, should be sort of a rubbery consistency (so that when you eat the crepes there is'nt a mushy oatmeal part).
I fill my crepes with the allowed strawberry jam and roll them. You could fill with fresh strawberries and put some allowed syrup on top. If you want pancakes instead, use about 1/2 the amount of water and don't try to cover the whole pan in a thin layer - ladle out the mixture like you would for pancakes.
I made this first batch very plain with no extra sweetner or cinnamon, but I think next time I'll add those items. 1 of my crepes wasn't cooked quite enough in the middle so I can't stress enough to let these cook long enough so you don't get gooey oatmeal in the middle, lol. Also, you might want to slowly reduce the heat over the course of making each crepe because the pan gets quite hot over time and you don't want your crepes to burn, you want them to be slowly cooked through.

Ok so I've been having these every day for breakfast for the past week. FYI that these taste better if you make them in advance and put them in the fridge overnight. It seems to "set" the crepes better so you aren't getting that weird mushy oatmeal taste.
So what I do now is, make 4 crepes, place in fridge. In the morning, I grab 2 of the crepes, fill with a bit of jam and roll. At work, I nuke them for 15 seconds. Tasty!
PS. I also did add some sweetener and cinnamon and they def taste good that way. Once I nuke for 15 secs, as I go to take a bite, a whiff of cinnamon hits me and it really makes me feel like I'm getting some comfort food.
