I'm an egg lover so trying to make egg whites tasty has been a huge challenge.

I've found that Salsa and eggs go together very well and the Salsa really adds some zip to an omelette.

3 egg whites
3 or 4 large pre cooked shrimp cut into pieces
Chopped green onions
Diced peppers
Diced tomatoes
1 slice FF cheddar cheese
1 Tbsp Salsa
PAM
Salt and Pepper to taste.

You can replace or add to the vegetables with any of your own that are on the acceptable list.

You can also use Fat Free ham from the acceptable list instead of the shrimp or just have a vegetable ommlette.

Whip the egg whites until frothy then add in all other ingredients except the cheese and the salsa.

Pour into fryng pan and cook on med heat until done.

Cut cheese slice in half and lay both peices on one side of the omelette and then flip the other side over onto it.

Remove omelette from pan onto a plate and then spread the salsa onto the top.

Very simple and to me tastes better than Egg Creations or Egg Beaters although those are good when you're in a hurry also.

YIELD: 1 Protien and 1/8 - 1/4 vegetable

If you don't use shrimp or ham in the above you can add 1 egg white.

I might be wrong, but that sounds like too much protein to me. we're allowed six egg whites, so if you're having 3, that's a half a protein.

one protein is also 3 slices of fat free cheese. so if you have one, that's a third of a protein.

and for me, 3 1/2 ounces of shrimp, or "one protein" is 5 large shrimps. So it looks to me like there's too much shrimp in there.
 
Three or four large shrimp would be more than a half a protein.

Or am I figuring wrong?
