Ok, so I took a favorite recipe of mine and Bernied it up.  I think everything here is allowed.  I tried it and LOVED it. The nurse said it was ok but I'll put it here to see what ya'll think...

8 oz of Mushrooms, peppers, onions.
(I like porcini, but any "meaty" mushroom will work)
4 Melba toast.
1 tsp. Kraft "No Fillers" Parmesan Cheese. ( I have this brought up from the States b/c I haven't found it in Canada).

Weigh the vegetables so they add up to 8 oz total.  This will vary based on the amount and size of the mushrooms. Twist of the stems of the mushrooms.  Dice up the stems, the peppers, and the onion.  Give them a quick fry in some Pam until tender, remove from heat.  Make crumbs of the Melba toast. (I just put mine in a dry blender but I'm sure a food processor or even a rolling pin would do the same).  Add breadcrumbs to the veggie mix.  Spoon mix into mushroom caps.  Line a small pan with some foil and place stuffed mushrooms cap side down in pan.  Spritz with a little ICBINB spray to make them a bit moist, and then sprinkle Parmesan on top.  Bake in toaster oven for 10-15 min, then broil for 5 min or until cheese is crisp on top.  That's it. Enjoy.

I had this the other night with my dinner... LOVED it.  

So, what do you think?  Brian, can you do the protien/vegtable/breakdown thingy you do please?
The nurse suggested I submit it for the book.  I'll let ya'll decide first.

*Assuming you are using a melba toast that is "2 slices = 1 serving" - adjust if necessary

Looks "legal" to me and sounds delicious.  Printing and putting in my recipes binder in the kitchen.

I made stuffed mushrooms last night for supper but I filled them with Yves vegetarian Tex Mex ground round, chopped tomato and finely chopped steamed broccoli. It was YUMMY!! and filling. It felt like I was filling up on a spicy meaty meal

You're a genius! I'm going to try making stuffed mushrooms today, but adding a garnish fat free cream cheese & protein 2/3 shrimp & 1/3 serving of fat free mozza cheese!
