Of course this is only quick if you have hardboiled eggs already made up and in the fridge. If you don't, you really should consider keeping these around as a staple.
1 1/2 slices Kraft Fat Free cheddar cheese 3 hard boiled egg whites (if you've already cut the eggs in half and discarded the yolks, remember that this is 6 halves) 2 Tbsp Old El Paso salsa (or any other from the food list -- use medium or mild if it suits you)
Cut/break your cheese slices into squares so that 1 square = 1/4 of a slice -- you should get 6 squares.
If you haven't already, cut hardboiled eggs in half and discard the yolks (or poison your family with them or whatever).
Put a teaspoon of the salsa in each half egg yolk (2 Tbsp = 6 tsp so you should have just enough).
Put one of the cheese squares on top of each half egg yolk.
EAT!
These are super tasty, fast, and filling.
Option: If you have the shredded Kraft Fat Free cheddar, use 1/4 cup of that instead of the slices. Then put the cheddar in first and spoon the salsa on top of it.
Option: If you use the slices, sprinkle a little paprika on them to make them less boring looking.
Yield: 1* Protein, 1 Miscellaneous:Garnish**
* 1/2 of your protein is from the fat free cheddar here and only 2 servings of fat free cheddar are allowed per week, so keep track of that.
** Miscellaneous:Garnish is salsa which is 2 Tbsp maximum per day, so this is your daily maximum of salsa.
